E. Bauman Ph.D.Institution:Cornell UniversitySummaryBiomedical studies with animal models have demonstrated that conjugated linoleic acids (CLA) have many positive health benefits. Major sources in human diets are meat and milkproducts derived from ruminants. The presence of CLA in ruminant fat is due tobiohydrogenation of polyunsaturated fatty acids. Thus content of CLA in ruminant fat isdependent on rumen production of CLA and trans11 C18:1 as biohydrogenation intermediates and trans11 C18:1 by9desaturase. Our first objective examined dietary supply ofpolyunsaturated fatty acids on content of CLA in meat cuts. Extruded fullfat soybeans were used and we observed a 20% increase in CLA. The form of CLA in beef fat was cis9 trans11 and this is of special significance because this CLA isomer has anticancer properties. However the increase in CLA with the dietary supplement of ESB was much less than we achieve with lactating cows. Thus some of the differences in rumen dynamics between steers and cowsmust be affecting the biohydrogenation process and we have to understand this in steers before we can manipulate it to our advantage. Our second objective examined 9 desaturase. We found this enzyme was predominately located in the fat cells. Thus it is likely that this enzyme and the endogenous synthesis is the main source of CLA found in beef fat. We also showed that mRNA for this enzyme is regulated by dietary factors. This offers the potential to enhance CLA content of meat via endogenous synthesis as we gain knowledge of specific factorsregulating the 9desaturase gene.
